Colorful Abundance

Ok Jill, now you have to tell us how they get that colour. At the risk of looking like an ignoramus; it doesn't grow that way does it?

Well you get this spray paint...just kidding! I'm told that the for the gold/orangey one, the plant produces large amounts of beta-carotene that turn the normally white parts of the plant to this beautiful color. And the reddish one is caused by the presence of an antioxidant like what is found in red cabbage. And actually the white ones are white because the leaves are gathered up over the head and fastened to blanch it; otherwise they are a cream color. Unfortunately, at least around here, they don't use a cool tractor gizmo for harvesting, just a nice long, sharp machete!

Seeing this picture caused me to recognize the "flower" in the word cauliflower for the first time in my life.

Thanks Jill. I have never, ever seen anything but cream coloured cauliflower. And I've been around the block a couple of times.

Oooo! Cool color combo! There's a nifty light green one that Wayne should look for too. I think it is a hybrid with broccoli or something similar, and makes sort of pyramid shapes in semi-fractal growth patterns. I don't know what it's called.

I saw these cauliflower for the first time this morning at our local Farmer's Market...what a surprise since I have never seen them before! Guess I'll ditch my photo since you beat me to it! Great shot!

Makes for a colorful display. We have that combination here as well as the green one. Have you tried the colored ones yourself? Perhaps I'm a bit old fashioned when it comes to 'natural' food. These have to have gone through some modification process. Great photo though Jill.

My goodness, what colours. I'm glad you explained how they got to be like this. Fascinating. It would be strange to eat the purple one - wonder if it tastes the same? Nice shot.

I have never seen any other cauliflower color except the cream ones. This is very interesting to see! I'm glad Wayne asked about these...I felt the same as he did!

The purple one becomes very unappetizing looking if cooked in water or steam. I prefer a minute or so in the microwave, then tossed with EVOO and a little garlic or garlic pepper. Some recommend roasting in a hot oven. We like all the different colors raw.

I think they all taste about the same.

From what I've read, these are cultivars and not genetic engineering.

I agree, Jill. They all taste pretty much the same - but the different colors make dinner so festive. What a great photo!
