I prefer a minute or so in the microwave, then tossed with EVOO and a little garlic or garlic pepper. Some recommend roasting in a hot oven. I'm told that the for the gold/orangey one, the plant produces large amounts of beta-carotene that turn the normally white parts of the plant to this beautiful color. And the reddish one is caused by the presence of an antioxidant like what is found in red cabbage. And actually the white ones are white because the leaves are gathered up over the head and fastened to blanch it; otherwise they are a cream color.
